“What is rare is invaluable”. Saffron, which flowers in winter is part of such invaluable creations. Harvests take place before sunrise to preserve the substance of the flower. The saffron plantations are mobilized from the end of October to the end of November. After harvesting, the pistil is extracted from the flower by hand then kept protected from the air and light. It is then dried. One hectare of saffron makes it possible to produce on average 4.5 kilograms of spice. A well maintained saffron plantation makes it possible to obtain up to 8 kilograms.
